Jane's Krazy Mixed-Up Salt is sold in a white container in most supermarkets in spice and seasonings section. It is a blend of chunky salt mixed with herbs and spices. I developed this easiest of recipes years ago. The majority of saltiness rolls off during cooking time, leaving behind a very tender and flavorful pork roast that will have people asking for more! Even gravy mixed with pan drippings turns out great. (Note: Total roasting time depends on size of roast.)
Ingredients:
jane's krazy mixed-up salt
1 boneless pork loin roast
pan dripping, flour and water for gravy, if desired
Directions:
1. Preheat oven to 450 dg.
2. Plase a sheet of about 3 double layers of paper towels on counter.
3. Cover paper towels with a thick layer of Janes Krazy Mixed-Up Salt.
4. Roll pork roast in Jane's salt to be totally covered on all sides.
5. Place on rack in baking pan and bake in preheated 450 dg.oven for 10 minutes.
6. Lower heat on oven to 250 dg. Bake an additional 45-75 minutes until meat thermometer reaches 150 dg.
7. Remove from oven, cover with foil and let rest 15 minutes. (Meanwhile, gravy can be made in pan drippings if desired. Serve with gravy drizzled on pork slices or with mashed potatoes.).
8. Slice and enjoy!
