Yellowed, food-spattered clipping out of some newspaper. I sometimes used to make this as a main dish for a vegetarian boyfriend, along with a watercress salad. Ingredients:
1 tablespoon butter |
1/2 cup chopped mushroom |
4 eggs, lightly beaten |
4 cups shredded jarlsberg cheese (1 1/2 lbs) |
1/4 cup snipped chives |
1/2 teaspoon white pepper |
1/2 teaspoon grated nutmeg |
1 teaspoon chopped fresh tarragon (or 1/2 tsp dried) |
Directions:
1. Preheat oven to 350°. 2. Grease and flour an 8 square cake pan to make thick squares - OR - a 13 x 9 cake pan to make thin squares. 3. Melt butter in a saute pan over medium-high heat. Add mushrooms and saute until all the liquid evaporates. Remove from heat. Set aside to cool. 4. In a large bowl, combine eggs, cheese and chives. Stir in the cooled mushrooms, Add the white pepper, nutmeg and tarragon. Mix well. 5. taste and correct the seasonings. 6. Spread mixture evenly in prepared pan. Bake until knife inserted in the centre comes out clean, about 25 minutes. Let cool in the pan on a rack for 5-7 minutes before cutting into squares to serve. |
