These muffins have a surprise in the middle. -My youngest brought this recipe home from Wonder Years. (pic courtesy of Photobucket) Ingredients:
2 cups flour |
1/4 cup sugar |
1/2 teaspoon salt |
1 tablespoon baking powder |
1 cup milk |
1 egg, beaten |
1/4 cup vegetable oil |
your favorite jam or jelly |
Directions:
1. Preheat oven to 350*. Grease 12-cup muffin pan. (or use paper liners) 2. In a mixing bowl, mix the dry ingredients. 3. In another bowl, mix the liquid ingredients. 4. Mix the liquid and dry ingredients together. 5. Fill each muffin cup 1/3 full. Add 1 teaspoon of jam to each muffin cup. Then finish filling cups to 2/3 full. 6. Bake 30 minutes or until golden brown. |
