Delicious mini muffins that both kids and adults will love! Sweet jam is swirled into the middles of light and fluffy muffins. Perfect with coffee, tea, or a glass of milk! Switch up the jam flavors to suit your tastes. Read more . These reheat well, too. Ingredients:

1 1/2 c. all-purpose flour |
1/3 c. granulated sugar |
2 tsp. baking powder |
1/2 tsp. salt |
1 egg, beaten |
1/2 c. milk |
1/4 c. vegetable oil |
1 tsp. vanilla extract |
1/2 c. desired flavored jam, room temperature and stirred lightly to loosen gel |
topping |
2 tbsp. butter or margarine, melted |
1/4 c. granulated sugar |
Directions:
1. Preheat oven to 400 degrees F. Grease a 24-cup miniature muffin pan. 2. In a large bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, combine egg, milk, oil, and vanilla. Add to dry ingredients, stirring just until blended. 3. Fill greased miniature muffin pans two-thirds full with batter. Top each with a 1/4 tsp. jam. Gently swirl jam into batter with toothpick. 4. Bake 12 - 15 minutes, testing for doneness with a toothpick. Remove from pans and brush with melted butter; sprinkle with sugar. Serve warm. 5. You can also use a regular-sized muffin pans; bake a few minutes longer and check for doneness as above. You will get 8 - 12 muffins in a regular-size muffin tin. 6. To reheat: Wrap muffins in aluminum foil and bake in 350 degree oven for 10 minutes. |
