Jamie's Roasted Sweet Garlic Soup |

This is one of Jamie Oliver's recipes. Sounds like a great one for garlic lovers! Ingredients:
10 -12 cloves garlic |
450 g blanched almonds |
140 g sourdough bread, crusts removed (4-5 slices) |
225 ml low-fat milk |
450 ml chicken stock or 450 ml water |
sherry wine vinegar |
extra virgin olive oil |
sea salt |
fresh ground black pepper |
1 bunch green grape, quartered |
3 -5 sprigs fresh marjoram, chopped |
Directions:
1. Preheat the oven to 200 C or 400 degrees F. 2. Bake the garlic cloves for about 20 minutes or until soft. 3. Break the bread into small pieces and soak in the milk. 4. Using a food processor, blend the almonds until fine. 5. Throw in the soaked bread and the soft inside of the roasted garlic. 6. Add a little chicken stock or water and blend. 7. When you have a fine purée, gradually add in enough stock or water to make a nice, thick, soup. 8. Finish by seasoning with salt and pepper and a good drizzle of sherry vinegar and olive oil. 9. Garnish with some green grapes and chopped marjoram on top. |
