Jambalaya Shrimp And Rice |

Jambalaya seems to me to be one of those dishes you can tinker with. So have fun with the meat variations. Omit and add at will and simply Enjoy! Ingredients:
4 slices of bacon, diced |
1 medium onion, minced |
1/2 medium green pepper, diced |
2 c. chicken bouillon |
1/2 c. organic ketchup |
2 t. organic brown sugar |
1 - 10 oz. package of cooked, shelled, deveined and tails removed shrimp(thaw before using) |
1 c. finely diced ham |
2 t. cornstarch |
3 t. cold water |
salt & pepper to taste |
hot, cooked, organic rice |
Directions:
1. In a large skillet, cook bacon until crisp. 2. Remove from pan 3. Cook onion and pepper in bacon fat for 5 minutes 4. Add next 3 ingredients 5. Simmer covered for 15 minutes 6. Cut shrimp into pieces and add to skillet 7. Add ham mixture and heat well 8. Thicken with blended cornstarch and water; season with salt and pepper to taste 9. Serve over hot rice |
