Jambalaya - Sharon Matheson's Recipe |

Ingredients:
1 c. finely chopped green pepper |
1 c. water |
1 lb. chicken breast |
1 lb. sausage meat or italian sausage |
1 tsp chili powder |
1 tsp salt |
1/2 tsp ground thyme |
1/8 tsp cayenne pepper |
10 oz. can condensed chicken broth |
12 oz. cooked medium shrimp, thawed |
2 c. okra |
2 x 14 oz. canned stewed tomatoes |
3 c. instant white rice |
3/4 c. chopped onion |
Directions:
1. Cut chicken into bite-sized pieces and brown in a little oil in fry pan. Add sausage and onion (Aunt Sharon buys a pepperoni meat that's already cooked). 2. Add next 9 ingredients. Bring to a boil, stirring often. Boil slowly for 10 minutes, covered. Stirring occaisionally. 3. Add green pepper and shrimp. Stir. Turn off heat. Allow to stand on burner for about 10 minutes until liquid is absorbed. |
