Low fat dee-licious Jambalaya Ingredients:
1 1/2 cups brown rice |
1 cup tomato sauce, canned |
1 1/2 cup tomatoes, canned |
1/2 lb. beef sausage |
2 cups chicken, shredded |
1 cup onions, chopped |
1 cup celery, chopped |
1 cup bell pepper, chopped |
1/2 lb. raw shrimp |
3 cups chicken broth, canned |
Directions:
1. Add 1 tsp. oil to non-stick skillet. Add celery, onions, bell peppers and 1 tsp. chopped garlic. Cook until wilted. Transfer vegetables to an oven proof dutch oven. Add rice, broth and tomato sauces. Bring to a boil. Add shredded(cooked) chicken, sausage, and shrimp. Bring to another boil. Cover and put in 350 oven for 1 1/2 hours.DO NOT STIR> Remove from ove and let stand 20 minutes. Rice should be soft. Now you can stir! |
