You'll appreciate this nicely spiced combination on days when you're pressed for time. Ingredients:
2 tablespoons olive oil |
1 onion, diced |
1 green bell pepper, diced |
4 cloves garlic, minced |
1 pound fully cooked kielbasa, cubed |
1 (28 ounce) can diced tomatoes with juice |
1/2 cup water |
1 teaspoon paprika |
1/2 teaspoon dried oregano |
1/4 teaspoon dried thyme |
3 dashes hot sauce |
1 1/2 cups orzo pasta |
Directions:
1. Heat olive oil in a large, deep skillet over medium heat; cook and stir onion and green bell pepper in the hot oil until tender, 5 to 8 minutes. Stir garlic into vegetables and cook until fragrant and softened, about 2 minutes. 2. Stir kielbasa sausage, tomatoes with juice, water, paprika, oregano, thyme, and hot sauce into onion mixture, bring to a boil, and stir in orzo. Reduce heat to low, cover, and simmer until orzo are tender, about 10 minutes. |
