Wonderful Cajun dish with seafood,sausage,ham and great seasonings. Ingredients:
2tbs olive oil |
12oz. boneless,skinless chicken thigh,cut into 11/2 pieces |
1/2lb. cooked ham,cubed |
1/2lb kielbasa,cut in 1' pieces |
1 med. red onion,cut in thin wedges |
2 celery stalks,finely diced |
3 garlic cloves,minced |
1c converted rice (like uncle ben's) |
1 can(28oz) diced tomatoes |
1c low-sodium chicken broth |
1 green bell pepper,diced |
2 to 3 tsp.cajun seasoning |
2 bay leaves |
1lb. large shrimp,peeled and deveined |
1/2c chopped flat-leaf parsley |
6 scallions,finely chopped |
Directions:
1. Heat oven to 350 2. In a 4 to 5 qt. Dutch oven,heat 1Tbs. oil over med-high heat. Add chicken and cook,turning ,about 4 mins.;transfer to plate. Add ham,and sausage;cook till lightly browned,about 3 mins. Transfer to plate with chicken. 3. Add remaining 1 Tbs oil to Dutch Oven. Add onion,celery and garlic;cook until just softened,about 4 mins. Stir in rice,tomatoes,broth,bell pepper,Cajun seasoning,bay leaves,and meats and bring to boil. 4. Cover and bake until liquid is absorbed and rice is nearly tender,about 35 mins. Add shrimp,pushing into the mixture'then cover and bake,stirring once,until shrimp is opaque,5 to 10 mins. discard bay leaves. Sprinkle with parsley and scallions. |
