This is one of my favorate rice recipe Ingredients:
4-6 bacon strips (diced but not too fine) |
1 large onion ( diced in cubes) |
2 garlic cloves (crushed finely) |
4 med. size tomatoes (peeled and chopped) |
1/2 tsp. fennel seeds (optional) |
1/2 tsp. thyme |
1 c. cooked rice |
1 c. chicken stock ( heated) |
1/4 lb. cooked ham (cubed in about 1.2 cm. thick) |
1 c. fresh or frozen shelled shrimps |
1 yellow pepper (cut in strips) |
1 green pepper (cut in strips) |
few drops of hot pepper sauce |
salt and pepper |
Directions:
1. Cook bacon in a large cast iron pan over med. heat. 2. When bacon is cooked, remove bacon by using slotted spoon and set aside. 3. Add garlic and onion to hot pan, stir occassionally until cook in bacon fat. 4. Stir in tomatoes, fennel and thyme. Simmer for 5 minutes. 5. Add in rice and stock, ham, and bacon, stir well. 6. Cover and cook for 15 minutes. 7. Add peppers and shrimps, hot sauce and desired amount of salt and black pepper. 8. Cover and continue cooking for about 5 minutes. |
