1 teaspoon oil, vegetable |
1/2 cups onion, finely chopped |
1/3 cups peppers, green, bell |
1/3 cup celery, finely chopped |
1 teaspoon creole seasoning |
1/4 teaspoon pepper, black ground |
16 ounces tomatoes, stewed, no-salt-added, undrained |
16 ounces broth, chicken, fat-free, salt-free |
1 cup rice, long grain, uncooked |
1/2 cup lean ham, cooked, finely chopped |
10 ounces haddock fillets, chunked |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat until hot. Add chopped onion, green pepper, and celery; cook 7 minutes or until tender, stirring often. Add Creole seasoning and 1/4 teaspoon pepper; cook 1 additional minute. 2. Stir in tomatoes and next 3 ingredients. Bring to a boil; cover, reduce heat, and simmer 15 minutes. Add fish; cover and cook 5 to 7 minutes or until fish flakes easily when tested with a fork. 3. Yield: 4 servings. |
