Jambalaya Ingredients:
1 cup brown rice |
8 oz turkey sausage |
14 oz tomatoes, diced, canned |
1 green pepper, diced |
1/2 onion, diced |
12 large shrimp, peeled and deveined |
2 teaspoons dried oregano |
2 teaspoons dried parsley |
2 teaspoons cajun seasoning |
1 teaspoon cayenne pepper |
1/2 teaspoon dried thyme |
1 tbsp olive oil |
2 cups chicken stock |
Directions:
1. Saute sausage, without oil, in skillet, until lightly browned, remove. 2. Warm oil in same pan. Saute onion and green pepper until soft. 3. In medium saucepan, add cooked ingredients to stock, rice, tomatoes, and seasoning. 4. Stir, bring to very low boil and cook for 40 minutes. 5. Add shrimp and cook for 10 more minutes. 6. Remove from heat, and let set for 5 to 10 minutes. |
