Ingredients:
12 ounces boneless skinless chicken breasts
2 green peppers, chopped
1 medium onion, chopped
2 stalks celery, sliced
1 (14 1/2 ounce) can whole tomatoes
1/3 cup tomato paste
1 1/2 cans beef broth
1 teaspoon dried parsley
1 1/2 teaspoons dried basil leaves
1/2 teaspoon dried oregano leaves
1 teaspoon tabasco sauce
1 teaspoon cayenne pepper
1/2 teaspoon salt
1 lb shelled, steamed shrimp
3 cups cooked rice
Directions:
1. Cut chicken into 1-inch pieces.
2. Add all ingredients, except shrimp and rice, to crock pot.
3. Cook on low 8-10 hours or 3-4 hours on high.
4. Add shrimp the last 15-30 minutes of cooking.
5. Stir in rice when ready to serve.
