Jambalaya for the ingredient-challenged! SPICY Ingredients:
1 (15 ounce) can chicken breasts |
1 (16 ounce) can pinto beans |
1 lb kielbasa, chopped small |
1 cup rice |
1 tablespoon red pepper flakes |
2 tablespoons cumin |
1 tablespoon thyme |
black pepper |
season salt |
6 cups water or 6 cups chicken broth |
1 cup rice |
4 celery ribs, chopped |
1 large onion, chopped |
1 elephant garlic cloves or 4 garlic cloves, chopped |
Directions:
1. saute the kielbasa until it starts to get soft. 2. add celery, onion, garlic, saute till the onion turns transparent and the kielbasa starts to brown. 3. add beans and their liquid, chicken and its liquid, pepper, pepper flakes, and thyme and cumin. stir to coat, saute for about 2 minutes. 4. add liquid, rice, and season salt. 5. reduce heat and simmer for about 45 minutes till rice is tender and liquid is almost gone. stir frequently to prevent sticking, and add more liquid if it looks too dry before the rice is cooked. |
