Chicken stewed in spices, serve on a bed of rice Ingredients:
chicken thighs x 8 |
cooking oil |
chicken stock 1 pint |
chicken seasoning 2-3 teaspoon |
ground black pepper 2-3 teaspoon |
sweet chilli marinade 100ml |
dried thyme 2-3 teaspoon |
mild curry powder 2-3 teaspoon |
about half tin of tomatoes |
garlic 2-3 cloves |
onions 2 medium finely sliced |
all the above are approx depending on taste, except for the chicken stock tin tomatoes and chilli marinade |
Directions:
1. Put the chicken in a bowl and add the the marinade and mix, then add the garlic crushed, and the chicken seasoning, black pepper,thyme,curry powder, (a small teaspoon of cayanne pepper maybe added if desired) mix well , once the chicken is marinaded, put 2 tablespoons of oil in a frying pan and add the chicken and cook until the chicken is sealed, take out the pan and leave to one side, 2. put some cooking oil in a large heavy based pan or frying pan, add the onoins and cook, then add the chicken, tin tomatoes and chicken stock and simmer till the chicken is very tender, about half an hour, ,turning the chicken every so often, you may add more seasoning to the pan if desired, 3. serve on a bed of rice |
