Made with fresh pumpkin Ingredients:
1 c fresh cooked pumpkin |
2 1/2 c chicken broth |
1 tbsp flour |
1/8 tsp ground ginger |
1/8 tsp ground nutmeg |
1/2 c evaporated milk |
1/2 c water |
1/2 tbsp onion |
2 eggs |
Directions:
1. Combine pumpkin and chicken stock in large saucepan or double boiler. Mix the flour with the spices. 2. Add water to milk. Add one-fourth cup of milk and mix to a smooth paste. 3. Add remaining milk and beaten eggs. Stir into the pumpkin mixture. Cook 5 minutes over low heat or hot water, stirring constantly. Serve warm. 4. Optional 5. Garnish with chopped parsley. 6. 1 1/2 quarts. |
