Jamaican Pumpkin Cheesecake

Pumpkin with the hints of rum and chocolate.
Ingredients:
windmill cookie crust - see crust page
2 pounds philly cream cheese, softened
1 1/4 cup light brown sugar, packed
5 tbsp. flour
4 large eggs
15 ounce can pumpkin
1/3 evaporated milk
2 tea. pumpkin pie spice
3 tbsp dark rum
4 ounces semi-sweet chocolate, melted and cooled
Directions:
1. Preheat oven to 500^.
2. Blend cream cheese, brown sugar and flour until smooth.
3. Add eggs one at a time.
4. Add pumpkin and evap. milk.
5. Add spice, rum, and chocolate, mixing thoroughly.
6. Pour into prepared pan.
7. Bake at 500^ for 15 minutes.
8. Reduce temp. to 250^ and continue baking for 1 hour.
9. Let cool and refrigerate before serving.
