From local paper Ingredients:
2 teaspoons paprika |
1 teaspoon thyme, chopped |
1/4 teaspoon cumin, ground |
1/4 teaspoon allspice |
2 tablespoons olive oil |
4 (250 g) pork chops |
1 papaya, red peeled and diced |
1 red chili, seeded and finely chopped |
1 lime, peeled, finely copped |
2 tablespoons lime juice |
2 tablespoons olive oil |
1 teaspoon sesame oil |
1 teaspoon brown sugar |
1/4 cup coriander leaves |
Directions:
1. Combine the paprika, thyme, cumin, allspice and half of oil in a small bowl. Rub spice mixture over pork chops. Cover and stand for 30 mins to marinate. 2. Place the papaya , chilli lime flesh and juice, extra oil sesame oil and sugar in a bowl and stir until sugr dissolves. Stir through coriander leaves and sent aside. 3. Heat a chargrill on high heat. Brush with remaining oil. Cook pork to your liking. Rest for 5 minutes. 4. Serve with papaya salsa. |
