Jamaican Jerk Turkey Wraps |

I received this recipe after tasting the spicy wraps at a neighborhood party, explains Phoenixville, Pennsylvania's Mary Ann Dell. The grilled turkey tenderloin and light jalapeno dressing make them tops with my gang. Ingredients:
2 cups broccoli coleslaw mix |
1 medium tomato, seeded and chopped |
3 tablespoons reduced-fat coleslaw dressing |
1 jalapeno pepper, seeded and chopped |
1 tablespoon prepared mustard |
1-1/2 teaspoons caribbean jerk seasoning |
2 turkey breast tenderloins (8 ounces each) |
4 fat-free flour tortillas (8 inches) |
Directions:
1. In a large bowl, toss coleslaw mix, tomato, coleslaw dressing, jalapeno and mustard;set aside. 2. Rub seasoning over turkey tenderloins. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill turkey, covered, over medium heat or broil 4 in. from heat 8-10 minutes on each side or until a thermometer reads 165°. Let stand 5 minutes. 3. Grill tortillas, uncovered, over medium heat 45-55 seconds on each side or until warmed. Thinly slice turkey; place down the center of tortillas. Top with coleslaw mixture and roll up. Yield: 4 servings. |
