I haven't tried this yet, but it sounds easy and interesting! Ingredients:
6 boneless skinless chicken breasts, cut into 1-inch pieces |
1 cup coconut milk |
2 sprigs fresh thyme, minced |
1 medium onion, chopped |
1/2 teaspoon allspice |
Directions:
1. place all ingredients in large heavy skillet. 2. simmer over low heat stirring occasional for 45 minutes or until chicken is tender. 3. serve over rice. |
