Kidney beans are slow simmered in coconut milk, then herbs and spices added, and finally cooked with the rice. Ingredients:
1-1/4 cups dry kidney beans |
1 cup coconut milk |
1 sprig fresh thyme |
1 teaspoon minced garlic |
1/8 cup chopped green onions |
1 hot red chili pepper, sliced, and seeded |
2-1/4 cups uncooked brown rice |
Directions:
1. In a large saucepan, combine beans and coconut milk; cook for 2 hours on low heat. 2. Stir in thyme, garlic, onions and 2 to 4 slices chili pepper; simmer for 5 to 7 minutes. 3. Stir in rice and bring to a boil, then reduce heat, cover and simmer for 25 minutes, or until all liquid is absorbed and rice is tender. 4. Allow to sit for 5 - 10 minutes |
