These are typical cookies from Poland. They can be made with many different flavours of jam. Ingredients:
1/2 cup butter, softened |
3 ounces cream cheese, softened |
1-1/4 cups all-purpose flour |
1/4 cup strawberry jam or apricot jam/preserves |
1/4 cup sifted confectioners' sugar |
Directions:
1. Beat butter or margarine and cream cheese in mixer bowl until light and fluffy. 2. Add flour gradually, beating well after each addition. 3. Roll dough to 1/8 inch thickness on lightly floured surface. 4. Cut into 2-inch circles. 5. Spoon 1/4 teaspoon jam into center of each circle. 6. Fold opposite edges together, slightly overlapping edges. 7. Place 2 inches apart on greased or parchment paper lined cookie sheet. 8. Bake at 375 degrees F (190 degrees C) for 12-15 minutes. 9. Remove to wire rack to cool. 10. Sprinkle with confectioners' sugar. 11. Recipe Makes 2 dozen 12. Note: My Mother-in-law often tried to flip the open ends up a bit. I sometimes roll pieces of dough into a ball and press the bottom of a small juice glass into the centre. Then I fill the indentation with jam or preserves and it doesn't spill out. |
