A soft cookie, just like my grandma used to make. Simple but good. Ingredients:
1 cup butter or 1 cup margarine, softened |
1/4 cup brown sugar, packed |
1/4 cup granulated sugar |
1/2 cup corn syrup |
2 eggs |
1 teaspoon vanilla |
3 cups all-purpose flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
strawberries or raspberry jam |
Directions:
1. Cream butter and both sugars well. 2. Beat in corn syrup, eggs, and vanilla. 3. Mix in flour, baking powder and salt. 4. Roll 1/8 inch thick on lightly floured surface. 5. Cut in 2 3/4 inch circles. 6. Arrange on greased cookie sheet. 7. Bake in 350 degree F. 8. oven for 8-10 minutes. 9. Sandwich together with choice of jam. 10. Store in covered container. 11. The next day they will be soft. 12. Makes about 20. 13. *If dough seems sticky, chill for 30 minutes. |
