My good friend Leona gave me this recipe years ago when my children were all very small. They loved these cookies and so did I. Real good with a nice cold glass of milk. Ingredients:
1 cup margarine (you can use butter, i always do) |
1/2 cup molasses |
1/2 cup brown sugar |
1 egg |
1 teaspoon baking soda, dissolved in |
3 tablespoons hot water |
1/2 teaspoon salt |
1 teaspoon vanilla |
2 cups flour (or more as needed to make a stiff dough for rolling) |
1/2 cup raspberry jam |
Directions:
1. Cream together margarine and brown sugar. Beat in egg, molasses until fluffy. 2. Add soda with water, salt and vanilla. 3. Stir in eough flour to make a stiff dough for rolling. 4. Roll out 1/8th inch thick and cut into circles. (about 1 1/2 inches across). 5. Bake at 350*F for 8 to 10 minutes. 6. Cool on wire racks. 7. When cool put together in pairs with jam in the middle. |
