These are tasty, quick and easy. They are ideal to prepare if guests drop in unexpectedly. Ingredients:
1 3/4 cups all-purpose flour (sifted once) |
3 1/2 teaspoons baking powder |
1/2 teaspoon salt |
3 tablespoons sugar (fine granulated) |
6 tablespoons butter (or margarine) |
1 egg (well beaten) |
1/3 cup milk (approximately) |
1/4 teaspoon cinnamon (ground) |
4 tablespoons raspberry jam |
Directions:
1. Preheat oven to 425F. 2. Grease a cookie sheet. 3. Mix and sift once, then sift into a bowl: Flour, Baking powder, Salt, 2 Tbsp Sugar. 4. Cut in the butter (margarine) finely. 5. Combine well beaten egg with milk. 6. Make a well in the flour mixture: Add liquids, mix lightly with a fork to make a soft dough. Add a little more milk, if necessary, to make a soft dough. 7. Knead for 10 seconds on a lightly floured board. 8. Roll out to 1/2 inch (about 1 cm) thickness. 9. Cut out with floured 2 1/2 inch (about 5 cm) cookie cutter. 10. Arrange (well apart) on a greased cookie sheet. 11. Make a deep impression in the centre of each round of dough. 12. Brush dough with a little milk. 13. Sprinkle with 1 Tbsp sugar and cinnamon. 14. Drop a small amount of jam into each impression. 15. Bake in preheated oven about 12 minutes. 16. Serve immediately with butter (margarine). |
