This recipe is from the Pink Adobe, restaurant in New Mexico...you can make the Patty's as hot as you want but the recipe is written for them to be mild...the restaurant also serves these as a lunch with a fruit salad. Read more ... the prep time does not include the 30 minutes to chill the patties Ingredients:
1 ( 8-ounce ) can albacore chunk white tuna |
2 cups cold mashed potatoes |
3 tbsp. butter |
1 small fresh jalapeno, stem and seeds removed....or to taste |
1/8 cup chopped celery |
1/8 cup chopped onion |
1 egg beaten |
1 cup cracker crumbs, make from saltines pulverized in blender |

Directions:
1. Drain the tuna, break it into chunks and mix with the mash potatoes 2. set aside 3. heat 1 TBSP. of the butter in small skillet 4. add jalapeno, celery and the onion 5. saute until the onion is soft. 6. add this to the tuna mixture 7. stir in the egg ...blend until mixed 8. form mixture into 8 patties 9. roll the patties in the cracker crumbs 10. chill for 30 minutes in the refrigerator 11. heat the remaining butter in a large skillet 12. fry patties until brown on both sides 13. drain and serve 14. ................................................................. 15. these are mild .... add more jalapeno for hotter flavor |
