I love this stuff....another one of South Texas best recipes. I'd like to hear if anyone else is from Texas....ain't it a great place to live!! :) Ingredients:
1 (16 ounce) frozen corn |
1 (14 ounce) can cream-style corn |
2 jalapeno peppers, seeded and chopped |
6 green onions, chopped |
1/2 cup sour cream |
4 eggs, beaten |
Directions:
1. Heat oven to 350. Spray a 13 x 9 baking pan with non-stick cooking spray. 2. Combine frozen corn, cream corn, jalapeno peppers, onions, sour cream and eggs in a large bowl. 3. Season to taste with salt and pepper. 4. Pour into baking dish and bake uncovered for 1 hour and 10 minutes or until golden and bubbly. |
