Classic Connecticut Cuisine by the Connecticut Easter Seals. Add salt and other seasoning to the sour cream mixture to give this dish more flavor. A good substitute for mashed potatoes. Ingredients:
1 cup chopped jalapeno peppers |
2 cups sour cream |
3 cups cooked rice |
12 oz monterey jack cheese, shredded |
shredded cheddar cheese |
Directions:
1. Combine jalapeno peppers and sour cream in a bowl; mix well. 2. Layer cooked rice, sour cream mixture and Monterey Hack cheese 1/3 at a time in a 9x13-inch baking dish. Sprinkle with Cheddar cheese. 3. Bake at 350 degrees until cheese melts. |
