A NICE SPICY - JALAPENO -BAKED POTATOE CASSEROLE- Ingredients:
8 - medium boiling potatoes ( about 4 pounds) |
salt and pepper to taste |
1 green bell pepper, chopped |
1 red bell pepper chopped |
8 green onions chopped ( 1- med purple onion) chopped |
1 cup butter, melted |
2 tablespoon flour |
2 - cups milk |
1 roll of jalapeno cheese ( 6 ounces) |
1 roll ( 6 ounces ) of garlic cheese |
1 jar ( 4 ounces ) pimientos, drained |
******** want it spicier add some chopped jalapeno peppers to it |
Directions:
1. Preheat oven to 350 degrees F. 2. boil potatoes whole just until tender. 3. peel and slice. 4. in a flat buttered 3 quart casserole dish, layer potatoe slices and season with salt and pepper. 5. saute' peppers and onions in 1/2 cup butter until tender. 6. set aside 7. in a saucepan, combine flour and 1/2 cup butter and stir until bubbly. 8. add milk and cheeses and stir over medium heat until cheese melts. 9. add onion mixture and pimientos.blend well 10. pour over potatoes and bake for 45 minutes. 11. you can make ahead the night before.......if needed |
