Jalapeno Popper Stuffed Chicken with Chipotle Sauce |

Ingredients:
1 8-ounce package(s) cream cheese, softened, divided use |
1 8-ounce package(s) shredded 4-cheese mexican blend |
3 jalapenos, seeded and minced |
4 boneless, skinless chicken breasts |
1/2 cup(s) milk |
1 cup(s) plain breadcrumbs |
2 cup(s) vegetable oil |
2 tablespoon(s) chipotles in adobo, minced |
Directions:
1. Stir together 6 ounces of the cream cheese with the shredded cheese and jalapenos in a small bowl. 2. Cut a pocket horizontally through the thickest part of each chicken breast and fill with 1/4 of the cheese mixture. Secure with toothpicks. 3. Dip chicken breasts in milk. Roll in breadcrumbs to coat. Heat the oil in a large, deep skillet over medium-high heat. Add chicken and cook until no longer pink in center and juices run clear, about 8 minutes on each side. An instant-read thermometer inserted in the center of a breast should read 165 degrees. 4. Mix remaining cream cheese with chipotle peppers; heat in the microwave until hot. Pour over hot chicken and serve. |
