JALAPENO PEPPER OMELET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Henson Estate in Dallas, Texas in 1982. Ingredients:
2 firm jalapeno peppers minced |
1/3 cup finely diced green pepper |
1/3 cup finely diced red peppers |
1/3 cup finely diced white onion |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1 teaspoon tabasco sauce |
2 tablespoon chopped basil |
2 tablespoons butter |
2 slices pepper jack cheese |
5 eggs |
Directions:
1. Add butter to skillet or omelet pan. 2. Add jalapenos, peppers and onions and sauté until onions are glassy looking. 3. Season with salt, pepper, Tabasco and herbs. 4. Beat eggs and water and slowly pour throughout sauteed mixture. 5. Simmer covered over low heat until eggs are set. 6. Add cheese and melt slightly then add minced basil. |
