Jalapeno Pepper Jelly Chicken |

Spice up your life a little with this easy to make stove top chicken dish. Ingredients:
4 boneless chicken breasts |
1/2 teaspoon garlic salt |
1/2 teaspoon chili powder |
1/4 teaspoon fresh ground black pepper |
1/2 teaspoon ground cumin |
1/2 teaspoon dried oregano |
2 tablespoons vegetable oil |
1/2 cup chicken broth |
1/4 cup balsamic vinegar or 1/4 cup red wine vinegar |
2 -3 tablespoons jalapeno jelly |
Directions:
1. Place breasts between sheets of wax paper and pound to 1/4 inch thickness. 2. Combine garlic salt, chili powder, pepper, cumin and oregano. 3. Rub some of the seasoning on both sides of each breast. 4. Heat oil in a heavy large skillet over medium high heat and cook chicken 3-4 minutes per side or until done. 5. Transfer to serving platter and keep warm. 6. Add broth, vinegar and jelly to skillet, cook 5 minutes or until slightly thickened, stirring occasionally. 7. Spoon sauce over chicken and serve. |
