It was a cold ,rainy, drab morning and I just wanted some flavor. I threw this together and it's now a favorite of mine. It's simple, yet flavorful. Ingredients:
2 jalapeno peppers |
2 teaspoons olive oil |
2 eggs |
1 tablespoon milk |
salt |
pepper |
2 ounces cream cheese |
Directions:
1. Heat the olive oil in a pan. Seed the jalapenos and mince. Add the jalapenos to the oil and saute for a few minutes, until soft. Beat the eggs with salt, pepper and milk. Add to the pan. Cover and cook until slightly set. Cube the cream chees and drop in dollops onto egg mixture. Cover again until the cheese is melted. Fold over and serve. I topped this with salsa. |
