This recipe is from Razzle Dazzle Recipes and is a restaurant recipe from La Margarita Restaurant. Ingredients:
2 1/2 lbs potatoes, peeled and diced |
1/2 cup butter, cubed |
1/2-3/4 cup heavy cream, warm |
1 jalapeno pepper, roasted, peeled, and pureed |
salt and pepper |
Directions:
1. Thoroughly wash, clean, and dice potatoes. 2. Place them in a pot of water with a dash of salt. 3. Bring potatoes to a boil. 4. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12-15 minutes. 5. Remove the pan from the heat and drain. 6. In the same pot add the butter. 7. Using a handheld masher, mash the butter into the potatoes. 8. Add enough warm cream until desired smoothness is achieved. 9. Season the potatoes with jalapeno, salt, and pepper to taste. |
