(Update; This is my old recipe. The one I use now is from Toby Jermain #71979. It's much better than this one.) I first found a recipe for BBQ Jalapeno Cornish Game Hens. I tryed it using factory Jalapeno Jelly. I don't remember where I got this recipe but it is better by far. Ingredients:
1 1/4 cups jalapeno chiles |
1/2 cup anaheim chili |
5 1/2 cups sugar |
1 1/2 cups cider vinegar |
2 tablespoons lemon juice |
1 bottle pectin |
green food coloring |
Directions:
1. Char the chilies to free their skins. 2. Peel, seed, devain, and finely mince them. 3. Blend the first 5 ingredients until smooth. 4. Scrap the sides of the blender with a rubber spatula. 5. Blend again. 6. Repeat previous step. 7. Repeat last step again. 8. Pour into a sauce pan. 9. bring to a slow boil. 10. Cook for 10 min. 11. Add Pectin, boil 1 min. 12. Remove from heat, stir in 10 drops Green color. 13. Pour into sterilized jars, seal, place in water bath for 5 min. |
