Jalapeno Jack Corn Muffuns

This is 2 of 2 recipes I am posting just to get started. I love the combination of corn, jalapeno, and jack cheese. This is a simple one. I promise soon to have New Creative dishes with photos as I invent them. Enjoy! Read more !
Ingredients:
1 cup yellow corn meal
1 cup all-purpose flour
2 ts baking powder
1/2 ts baking soda
2 tbsp sugar
1 ts salt
1 cup butter milk or whole milk w/ ts vinegar
2 eggs lightly beaten
1/4 cup melted unsalted butter
1 cup jack cheese shredded
2 jalapeno peppers deviened and seeded and finely diced
1 jalapeno pepper, deviened, seeded and cut into 12 slices
Directions:
1. Preheat oven to 400 degrees F
2. Put a couple of drops olive oil on a papper towel and lightly coat muffin tin.
3. In a large bowl combine cornmeal, flour, baking soda, baking powder, and salt and wisk together.
4. In another bowl mix together, butter milk, eggs, butter, cheese and diced jalapeno peppers.
5. Add wet ingredients to dry and stir batter until all ingredients are well incorperated.
6. Pour batter into muffin tin 2/3 way full per
7. Place a jalapeno slice on top of each muffin and bake until golden, About 25 to 30 minutes
