This is a recipe I found on a restaurant supply site. I've added a twist of my own. Tex-Mex meets Cajun, the clash of the Titans. LOL Ingredients:
2 cups cornmeal |
1 cup plain flour |
1 teaspoon baking powder |
1 each eggs,whole |
1 t tabasco® jalapeno pepper sauce |
1 cup green onion chopped |
1/2 cup parsley finely chopped |
1 cup buttermilk |
as needed deep fat oil for frying |
as needed salt |
Directions:
1. Combine all dry ingredients 2. Add eggs, Tabasco, green onion, parsley and buttermilk. Mix well 3. Drop about a 1/2 tablespoon of batter into 375ºF deep fat oil. 4. Remove from oil to drain, sprinkle with salt and serve 5. *** If you want to kick it up a little sprinkle with some chili salt available at Mexican markets or in the ethnic section of the grocery store instead of using plain salt. |
