This is a recipe I found on a restaurant supply site. I've added a twist of my own. Tex-Mex meets Cajun, the clash of the Titans. LOL
Ingredients:
2 cups cornmeal
1 cup plain flour
1 teaspoon baking powder
1 each eggs,whole
1 t tabasco® jalapeno pepper sauce
1 cup green onion chopped
1/2 cup parsley finely chopped
1 cup buttermilk
as needed deep fat oil for frying
as needed salt
Directions:
1. Combine all dry ingredients
2. Add eggs, Tabasco, green onion, parsley and buttermilk. Mix well
3. Drop about a 1/2 tablespoon of batter into 375ºF deep fat oil.
4. Remove from oil to drain, sprinkle with salt and serve
5. *** If you want to kick it up a little sprinkle with some chili salt available at Mexican markets or in the ethnic section of the grocery store instead of using plain salt.
