JALAPENO GRITS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huey Estate in Richardson, Texas in 1988. Ingredients:
4 cups boiling water |
1 cup grits |
6 tablespoons butter |
8 ounces pepper jack cheese grated |
2 eggs beaten |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Bring water to a boil in a heavy pot over high heat and stir grits into the water gradually. 2. Reduce heat and simmer covered for 30 minutes. 3. Stir in remaining ingredients and cook an additional 20 minutes. |
