This recipe came from the Jiffy Cookbook. Ingredients:
2 (8 1/2 ounce) packages jiffy corn muffin mix |
3 eggs |
3/4 cup buttermilk |
1/2 cup sour cream |
4 jalapeno peppers, seeded and diced |
1 cup onion |
4 tablespoons butter, melted |
Directions:
1. Preheat oven to 400 degrres, grease 13 x 9 inch pan. 2. Combine muffin mix, eggs, buttermilk, sour cream and peppers. 3. Saute onions in butter, until clear. 4. Add to mixture. 5. Pour into prepared pan. 6. Bake 30 - 45 minutes. 7. Serve warm. |
