This cornbread can't be beat! Fair warning: it ain't your gramma's cornbread....unless she came from the American Southwest! Ingredients:
1 1/2 cups cornmeal |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 cup fat free sour cream |
1/2 cup vegetable oil |
1 cup grated cheddar cheese |
3 eggs |
1 cup creamed corn |
1/2 cup onion, diced |
1/2 cup chopped jalapenos, canned or 1/2 cup fresh jalapeno |
Directions:
1. Preheat oven to 350. 2. Grease an 8x8 baking dish. 3. Mix the dry ingredients in a bowl. 4. When thoroughly stirred, pour in wet ingredients. 5. Mix until moistened. 6. Put into greased pan. 7. Spread. 8. Bake about 25 minutes or until lightly browned. |
