Jalapeno-cheese Hamburger Buns |

A great alternative to a regular hamburger bun. It holds condiments well. This bun also can be used for fantastic sandwiches. Ingredients:
2 pkgs dry yeast |
1 1/2 cups warm water |
2/3 cup dry milk |
1 1/2 tsp salt |
2 tbs shortening or lard |
1 cup cheddar cheese, grated |
jalapenos, minced. (use as many as you want) i use 2) |
4 tbs sugar |
1 egg |
5 cups (about) bread flour * 2 cups could be whole wheat |
Directions:
1. Proof yeast with sugar in 100 degree water. 2. Add dry milk, salt, shortening, egg, jalapenos, cheese and about four cups flour. 3. Knead. If kneading by hand, keep adding flour until dough is pliable. If by mixer, use dough hook and add flour until dough pulls away cleanly from bowl. Knead until a gofl ball size piece can be stretched without breaking. 4. Place in greased bowl and let rise until doubled. 5. Punch down and place on floured cutting board and with hands form into a log. 6. Divide in half and then divide each half into eight equal pieces. Roll each piece into a ball with the palm of your hands and flatten into a three inch diameter circle. 7. Place on greased baking sheet, cover lightly and let rise until doubled. 8. Place in 400 degree oven and bake until lightly browned on top and bottom. |
