This is grits done Tex/Mex.. I love them with a steak or grilled chicken.. For all the grit lovers.. ENJOY! Ingredients:
1 tablespoon olive oil... or bacon drippings |
1/2 cup onion minced fine |
1 clove garlic minced fine |
1 tablespoon jalapeno stemmed, seeded and minced |
1 teaspoon fresh thyme finely minced |
6 cups chicken stock |
2 cups white grits |
1 teaspoon smoked paprika |
tabasco chipotle sauce |
salt to taste |
white pepper to taste |
Directions:
1. Heat oil or drippings over med heat.. 2. Add onion cook till softened 3. Add garlic, jalapeno and thyme 4. Cook 1 minute 5. Add stock bring to a boil 6. Gradually add grits, stirring constantly 7. Reduce heat to medium or less and simmer until grits are thick. About 25 minutes 8. Stir as often as needed 9. Stir in paprika 10. Taste and season with Tabasco, salt and pepper 11. Enjoy! |
