Fast and easy Ingredients:
2 flour tortillas, burrito size |
3 oz soy cheddar cheese, soy station brand |
2 oz onion, chopped |
2 tbsp salsa, chi chi's medium thick and chunky |
1/2 cup refried beans, no lard, no transfat |
Directions:
1. Heat each tortilla 15 seconds in microwave. 2. Place one tortilla on plate. Top with refried beans, chopped onion, salsa and soy cheese. 3. Place 2nd tortilla on top of buritto. 4. Heat for 1.5 minutes. (I use a vented microwave cover over it.) 5. Cut like a pizza. |
