Cape Verdean Rice Dish
Ingredients:
1 onion diced
2 bulb of garlic diced (more or less depending on your taste)
2 tsp chicken base
2 tbs oil or bacon grease
1/8 tsp saffron powder
black pepper to taste
1/2 tsp garlic powder
1/2 tsp onion powder
1 ground bay leaf powder
2 tbs finely chopped parsley
1/2 tbs paprika (or season to your likings)
i/2 tsp goya adobo all purpose seasoning or to taste
4 cups of chicken broth
2 cups of uncle ben’s converted long grain rice
1 can goya pigeon peas my favorite, or red kidney beans drained or buttered lima beans drained or 1/2 pkg of frozen (peas) to add after water has decreased add to rice
no salt needed
Directions:
1. In a medium size pot melt the oil over low heat, add oil, diced onion, diced garlic, paprika, salt, pepper, and bay leaf let it cook slowly until the garlic and onion is soft and infused with the liquid. [The smell will make your mouth water]
2. Add water, Add rice, to boil, and stir constantly for about three to four minutes, lower heat, cover and let simmer until rice is tender and water is absorbed, don't allow all water to dissolve, when water has bubbled on top of rice and is almost gone add the beans, , stirring into the rice and cover for 15 min
3. Add Butter when rice is done and stir into the finished Jag
4. Also have a Linguica Recipe with Jag…..
5. Leftover Jag can be fried, and served with fried Linguica and eggs...
