Jack added this and that for lunch today and it was so yummy I had to put it on here... He just kept adding what looked good to him - clean out the fridge! We think you could substitute chicken and add mushrooms for a different take... I guessed at the amounts of spices, but it was very light. You could vary to your own taste. We used some Jalapeno Relish as to tweak the spice a bit. Ingredients:
1 tsp. olive oil |
4 oz ground beef, lean crumbles |
60 about a half-cup sliced eggplant |
1 small onion, chopped |
2 cloves garlic, sliced thin or minced |
1/4 tsp. nutmeg |
1/4 tsp. allspice |
1/2 tsp. ground oregano |
1 small yellow squash |
128 g great northern beans, canned, drained & rinsed |
1/2 cup water |
Directions:
1. Brush bottom of a frying pan with olive oil. We use very lean ground beef so this helps. Brown crumbles. Drain off fat if any. 2. Slice eggplant thin or dice it - add to hamburger. 3. Slice onion very thin. Add. 4. Mince or slice garlic cloves very thin. Add. 5. Add water and cover. Let steam for maybe 3-5 minutes - check so it doesn't get mushy. 6. Stir in spices. 7. Add thinly sliced squash and the drained and rinsed beans. Cover until heated completely. 8. Enjoy! |
