Ingredients:
1 tablespoon olive oil |
1 medium onion, chopped |
1/2 teaspoon dried thyme |
1/2 teaspoon dried tarragon |
1 (15 ounce) can italian-style diced tomatoes |
1 (15 ounce) can great northern beans, drained and rinsed |
Directions:
1. Heat oil in a medium skillet over medium-high heat. 2. Add spices and saute 30 seconds. 3. Saute onions for 5 minutes or so until limp. 4. Cover pan and turn heat down to low. 5. Cook, stirring occasionally, for 20-30 minutes, until onions are very soft and brown. 6. Raise heat to medium. 7. Add tomatoes and saute for 5 minutes. 8. Add beans and heat through. 9. Adjust salt and pepper. |
