Jackie Onassis's Italian Rice With Mushrooms |

Not sure where I found this recipe but it sounds good and I'm looking forward to trying it. Ingredients:
1 cup tomato, chopped |
1 lb mushroom, sliced |
1/2 cup onion, chopped |
3 cups chicken broth |
1/2 cup butter or 1/2 cup margarine |
1/2 cup red wine |
1/8 teaspoon pepper |
1 teaspoon salt |
1 cup cooked green peas |
1/4 cup parmesan cheese, grated |
1 cup rice |
Directions:
1. In a large skillet, cook rice, tomatoes, mushrooms and onion in butter for 10 minutes, stirring occasionally. 2. Add broth, wine and seasonings. 3. Cover. 4. Simmer 45 minutes, or until rice is tender and liquid is absorbed. 5. Stir in peas. 6. Add cheese. |
