Ingredients:
2 eggs |
2 cups sugar |
3/4 cup butter, melted |
3 1/2 cups all-purpose flour |
2 tablespoons baking powder |
1/2 teaspoon salt |
1 teaspoon ground ginger |
1/2 teaspoon ground cinnamon |
2 tablespoons water |
1 teaspoon vanilla extract |
1 1/2 cups finely chopped pecans |
cookie frosting |
8 (1-ounce) squares semi-sweet chocolate, melted |
Directions:
1. Combine eggs, sugar, and butter in a medium mixing bowl; beat well. Combine flour, baking powder, salt, and spices. Gradually add flour mixture to egg mixture; mix well. Stir in water, vanilla, and pecans. 2. Divide dough into fourths; wrap in foil, and chill at least 2 hours. Roll 1 portion to 1/8-inch thickness on a well-floured surface; keep remaining dough chilled until ready to roll. 3. Cut dough into 3-inch circles. Place on lightly greased baking sheets. Bake at 375° for 8 minutes or until lightly browned. Remove immediately to wire rack to cool. Repeat with remaining dough. Decorate with frosting and melted chocolate. |
