This is a basic zucchini bread recipe. It has oil and pineapple in it and is super moist. I add raisins, craisins, nuts, coconut, You can add all or mix and match even chocolate chips. Whatever you wish or crave. Read more . Recipe calls to make 3 loaves. I fill pans pretty full and make nice big loaves. Enjoy!
Ingredients:
3 medium eggs
1 cup vegetable oil
2 cups sugar
2 teaspoons vanilla
2 cups shredded zucchini, peel on and seeds scraped out
1 cups crushed pineapple, drained. i dont drain it dry.
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
3/4 teaspoon nutmeg, fresh grated is always best
1 cup raisins
1 cup walnuts
or use coconut, craisins, chocolate chips. or some of each.
Directions:
1. 350 degrees
2. for 1 hour. It may take longer if you add alot of extra stuff. It will be very golden brown due to the sugar and juice from pineapple
3. Grease and flour 9 x 5 loaf pans. Cool in pan for 10 minutes and remove to a wire rack.
4. Beat eggs, oil sugar, vanilla. Stir in zucchini and pineapple. Combine dry add to egg mixture with raisins and nuts or what ever else you add. Stir to blend. Pour into pans and bake.
5. Serve sliced with cream cheese or butter.
6. You can make a sugar glaze if you wish. Very moist easy quick bread.
